Start The Holiday With A Special Meal

This Fourth of July holiday, start the celebrating first thing with a special dish for breakfast or brunch.

The following is something I learned at a Pampered Chef home party a few years back.

For those who don't know, Pampered Chef is an in-home shopping service that includes demonstration and taste-testing parties.

There are a number of ingredients, but a food processor of any size (I have a mini-chopper) makes short work of the slicing and dicing.

Savory Vegetable Quiche

Ready-to-bake pie crust

2 cups zucchini, chopped

1 cup of mushrooms, chopped

1/2 cup bacon bits (the real stuff is best)

1 clove garlic, pressed, or equivalent powder or dry minced

1/2 cup green onions, sliced or chopped

1 cup milk

3 eggs

1 cup shredded cheese

dash of black pepper

Place crust in a 9-inch pie or quiche pan. Preheat oven to 375 degrees.

Whisk milk and eggs together. Stir in vegetables, bacon bits, seasonings and cheese.

Fill unbaked pie crust.

Bake 35 to 40 minutes or until knife inserted in center comes out clean.

Cool slightly to set and serve warm.

A nice accompaniment would be a fresh fruit plate and big glasses of orange juice.
