Mixes Help Make Meals In A Hurry

Rush here. Rush there. Get organized and make more time. There are mixes for everything from soup and bread, ready-made salads, meal kits and instant desserts; ready-made meals at grocery deli counters; and fast food of every kind. If you plan right, you could probably spend more time taking out the mix boxes, plastic bags and fast food containers than the time you would be in the kitchen "fixing" the meals.

Mixes are not a new innovation though. A book of recipes from the 1930s has two different "mix" recipes, one for a whole wheat baking mix and the other for a hearty soup mix.

Whole Wheat Baking Mix

6 cups whole wheat flour

3 cups unbleached flour

1 1/2 cups dry milk

1 tablespoon salt

1/2 cup wheat germ

1/4 cup baking powder

Mix with a wire whisk in a large bowl. Store in a covered glass jar.

To use the mix, try a breakfast cake or a loaf of bread.

Breakfast Cake from Mix

2 eggs

1/3 cup oil

1/3 cup honey, if desired

1 1/2 cups water

4 cups whole wheat baking mix

1 cup raisins

Beat together eggs, oil, honey and water, stir in mix and raisins. Spread in a 9-inch x 13-inch pan, sprinkle with brown sugar, cinnamon and nuts. Bake a 350 degrees for 25 minutes.

A variation: use part orange juice for the water and add grated orange peel.

Wheat Nut Bread from Mix

1 egg

1 1/4 cups water

4 cups mix

1/2 to 1 cup nuts, chopped

Combine egg and water, stir in the flour and nuts until moistened. Bake in a loaf pan for 50 minutes at 350 degrees.

Hearty Soup Mix

14 ounces split peas

12 ounces pearl barley

14 ounces alphabet macaroni

12 ounces lentils

1 1/2 cups brown rice

Combine and store in a glass jar.

Hearty Soup from Mix

6 cups water

1 1/3 cups soup mix

1 1/2 tablespoons salt

1 onion, chopped

2 carrots, sliced

2 stalks celery, chopped

1 1/2 cups cabbage, shredded

2 15-ounce cans tomato sauce

1 24-ounce can vegetable juice cocktail or canned tomatoes

1 pound meat, cooked, if desired

For 90 minutes, simmer the water, mix and salt. Add the remaining ingredients and simmer for 30 minutes more.

Meaty bones can be added to the water to simmer with the mix and salt. Home-canned tomatoes can be used in place of the sauce, if the water is reduced.
