Tricks For All Those Turkey Leftovers



The great folks at Kraft Foods have always had wonderful recipes. You usually found them in conjunction with the company's advertising in magazines and newspapers. With the advent of the Internet and World Wide Web, those great recipes and more are at our fingertips (literally and figuratively) at

The following are a few of the recipes for leftover turkey that sounded very appetizing.

Crunchy Holiday Turkey Salad

Preparation time: 10 minutes; total time: 40 minutes

Makes four servings.

1/4 cup Miracle Whip Light Dressing

1/4 cup finely chopped green onions

1/4 cup finely chopped celery

1/4 cup grated carrot

2 tablespoons dried cranberries

2 cups chopped cooked turkey

Mix dressing, vegetables and cranberries in large bowl.

Add turkey; mix lightly. Cover. Refrigerate at least 30 minutes or until ready to serve.


For added flavor and texture, add 1 tablespoon Grey Poupon Dijon Mustard and 1/4 cup chopped water chestnuts to dressing mixture.

Or try it with dried blueberries and two boiled (chopped) eggs. Another alternative: jicama is a tasty substitute for the water chestnuts.

Turkey Jambalaya

Preparation time: 15 minutes; total time: 35 minutes

Makes six servings, 1-1/2 cups each.

1 cup chopped celery

1 cup chopped green pepper

1 cup chopped onion

1 pound chorizo, cut into small chunks

1 teaspoon vegetable oil

2 (14-1/2-ounce) cans stewed tomatoes, undrained

1-1/2 cups water

2 cups chopped cooked turkey

1 tablespoons Cajun seasoning

3 cups Minute white rice, uncooked

Cook and stir celery, green pepper, onion and chorizo in hot oil in large skillet on medium-high heat 5 minutes or until chorizo is cooked through.

Add tomatoes with their liquid, the water, turkey and seasoning; mix well. Bring to boil.

Stir in rice. Reduce heat to low; cover. Simmer 5 minutes. Remove from heat. Let stand, covered, 5 minutes. Mix lightly before serving.

Turkey Salad with Cherries and Walnuts

Preparation time: 15 minutes; total time: 45 minutes

Makes six servings.

3/4 pound cooked turkey, chopped (about 2 cups)

2 cups Bing cherries, pitted, coarsely chopped

1/2 cup sliced green onions

1/2 cup sliced celery

1/3 cup Kraft Mayo Light Mayonnaise

1 (8-ounce) bag mixed baby salad greens or spring salad mix

1/2 cup Kraft Light Done Right! Red Wine Vinaigrette Reduced Fat Dressing

1/2 cup Planters Walnut Pieces, toasted

Mix turkey, cherries, onions, celery and mayo; cover. Refrigerate at least 30 minutes.

Toss salad greens with dressing. Divide among six salad plates. Top evenly with the turkey mixture.

Sprinkle with walnuts just before serving.

Substitute cooked chicken for the turkey.

Turkey Parmesan Casserole

Preparation time: 20 minutes; total time: 50 minutes

Makes six servings, 1-1/3 cups each.

8 ounces spaghetti, broken in half, uncooked

1 (10-3/4-ounce) can condensed cream of mushroom soup

3/4 cup Breakstone's or Knudsen Sour Cream

1/4 cup milk

1/3 cup Kraft 100-percent Grated Parmesan Cheese

1/4 teaspoon black pepper

3 cups frozen broccoli florets, thawed

2 cups chopped cooked turkey

Preheat oven to 350 degrees. Cook spaghetti as directed on package; drain.

Mix soup, sour cream, milk, Parmesan cheese and pepper in large bowl. Add spaghetti, broccoli and turkey; mix lightly. Spoon into two-quart casserole.

Bake 25 to 30 minutes or until heated through.

Serve with a crisp, mixed green salad, a whole-wheat roll and fresh fruit for dessert.

Turkey Mandarin Walnut Salad

Preparation time: 20 minutes; total time: 20 minutes

Makes four servings.

1/3 cup Planters Peanut Oil

3 tablespoons Grey Poupon Country Dijon Mustard

2 tablespoons honey

2 tablespoons lemon juice

6 cups torn spinach leaves

1-1/2 cups julienne-cut cooked turkey breast

1 (11-ounce) can mandarin orange segments, drained

1/2 cup Planters Walnut Pieces, toasted

Beat oil, mustard, honey and lemon juice with wire whisk until well blended.

Layer spinach, turkey and oranges in serving bowl.

Add mustard mixture and walnuts to salad; toss to coat.

Serve this main-dish salad with a whole wheat roll for a well-balanced meal.

How To Toast Nuts

Preheat oven to 350 degrees. Spread nuts in single layer on baking sheet. Bake 5 to 7 minutes or until lightly toasted, stirring after 4 minutes.

Turkey Slaw Salad

Preparation time: 10 minutes; total time: 10 minutes

Makes two servings, 3/4 cup each.

1 cup chopped cooked turkey

1 cup coleslaw blend

1/4 cup dried cranberries

2 tablespoons Miracle Whip Light Dressing

Toss turkey with coleslaw blend and cranberries in medium bowl.

Add dressing; mix lightly. Cover.

Serve immediately or refrigerate until ready to serve.

Great Substitutes

Substitute 1 package (6 ounces) Oscar Mayer Oven Roasted Chicken Breast Cuts for the chopped cooked turkey.

Prepare as directed, using Kraft Mayo Light Mayonnaise.
