A Recipe To Celebrate Cinco De Mayo

Cinco de Mayo — meaning the 5th of May — is this weekend. It commemorates the Battle of Puebla in which outnumbered Mexican troops defeated the invading French soldiers. The day has become an unofficial holiday north of the Mexican border. Will you be doing anything special, like having a party or is it just another day? If nothing else it is a time for parades, eating Mexican food and having a refreshing margarita.

I have an easy Mexican dish and one that I really like to order at my favorite Mexican restaurant, but here is a recipe that is easy and delicious.

Easy and Lightened Chile Rellenos

27-ounce can of whole green chiles, drained*

1/2 pound Monterey Jack cheese (or jalapeno cheese)*

1/2 cup Bisquick

1/2 cup milk

6 whole eggs (3 whole eggs and 6 whites, or egg substitute may be used)

Preheat oven to 350 degrees. Spray a baking dish with vegetable oil spray. Place one piece of cheese in each chile. Place chiles in a single layer in the pan. Mix eggs, milk and Bisquick. Pour batter over chiles. Bake at 350 degrees for about 30 minutes.

I use reduced fat cheese, skim milk and egg substitute to reduce the fat content.

*Five cans chopped, drained chiles and shredded cheese may be substituted.

This recipe and more delicious ones can be found in the Fireflies Can Cook cookbook. The cookbook is being sold by the Hellsgate Auxiliary and can be picked up at the Star Valley fire station on Walters Lane. The cost is a reasonable $10 for over 350 recipes submitted by friends and relatives and some are family favorites that have been passed down through past generations.

Hellsgate Fire Department

According to Fire Chief Gary Hatch, there will be no burn permits issued outside the town limits of Star Valley until further notice. He has issued a red flag warning within the Hellsgate Fire district because of the high winds and very dry conditions.

A reminder — the Hellsgate Fire Board meeting Wednesday, May 8 is at 5:30 p.m. at the Tonto Village station on Mathews Lane.

It is always a good idea to attend a few of these meetings, especially since this meeting is in Tonto Village and there is a proposal in place to build a new fire station on the vacant lot at the beginning of Tonto Village III. The public’s input is appreciated. The condition of the present fire station is perilous because of the roof and other issues. If anyone in the Village knows about the original construction of the firehouse, comments would be appreciated.

The Hellsgate Fireflies Auxiliary will meet at 5:30 p.m., Tuesday, May 7 at the Tonto Village Fire Station. The agenda will consist of what fund-raisers the Fireflies will be holding and elections for new officers for the year. Please think about coming to the meeting; the Fireflies are in existence for raising money for the area’s firefighters, who work very hard at keeping us safe from fires, both forest and homes and since many of us live within the forest, it is vital that our firefighters stay in training to battle those fires. Volunteers are needed to help with the fund-raisers.

Huge garage sale

The Knolls and Pine Ridge residents will be holding a huge garage sale at individual homes starting at 7 a.m., Saturday, May 4. Go and check out the variety of goods that will be for sale.

Birthdays

Tonto Village III resident Mitzi Boles Brabb will add another candle to her birthday cake on May 10. Hellsgate firefighter John Ceja will celebrate his big day on May 14. Happy birthday to the both of you. You know those memories that make you laugh out loud? I hope you make many new ones on your birthday.
